Wine
The grape-growing tradition of our family is now in its third generation. The long and hard-lived experience of our grandparents and our parents has been handed down to us, allowing our generation to mature from the mere cultivation of robust grapes to the production of wonderful organic wines.
Our Vineyards flourish upon gentle rolling hills that are abundant in natural clay which enriches the grapes, creating a fine, savory and rich-bodied wine. Just the delightful aroma that the wines emit as the cork is popped is intoxicatingly divine. Our land is located in the heart of Lazio Maremma, just a stone’s throw from the sea and is blessed with a sunny Mediterranean climate. The lengthy exposure to the sun’s rays graciously brings the grapes to a superior maturation and higher sugar content, exalting the aroma. Naturally these flavors are captured and imbibed in the wines.
Extra Virgin Olive Oil
The sacred olive tree and the oil taken from its ripe olives have accompanied the history of humanity from time immemorial. In the same way, our olive oil, extracted from the olives in our groves, has accompanied our family throughout many generations.
Even today, the harvest is done rigorously by hand and the olives are pressed into oil the same day they are picked. This immediate pressing preserves all of the natural vital qualities. The knowledgeable combination of several varieties of olives which are native to the Maremma – the Leccino, Canino, Frantoio and Maraiolo, creates an oil which has a fragrance and taste that is highly suited for drizzling over raw vegetables, salads, and breads in its pure, natural state.
Pasta
We have been cultivating organic durum wheat for over 10 years. It grows and flourishes on ancient Etruscan hills and not by chance, one of the most recent Etruscan tombs excavated was discovered in the center of our fields - a perfect location for travelling to the world beyond.
The site has optimum exposure to the sun and wonderful ventilation – fundamental factors needed in the growth of organic grain.
The production of grains and cereals in this territory is so deeply rooted, dating back to antiquity, that the ancient Romans named this territory, the “Granaio di Roma” – The Granary of Rome.
We seek to honor this distant calling of the land by cultivating organic grain from which we can produce pasta of the highest quality. Our pasta not only satisfies the palate, but also respects the history of the countryside in which its seeds are planted.
Tomato Sauce
The cultivation of tomatoes in the Maremma is one of the jewels in our crown. They are prized not only for their qualities of taste and smell, but also for the perfect balance between natural sugars and tomato juice, defined as an elevated level in the “Brix” scale, (an international standard which indicates the weight of sugar per volume of solution at a given temperature).
Our tomato sauce is made in an integrated manner, utilizing the entire fruit in a process that minces the tomato into small pieces producing a homogenous texture, but one in which it is still possible to detect the presence of both the tomato skin and the seeds. In this way, all of the nutritive qualities of the tomato are present in the final sauce.
Jams
Our fruit orchards flourish on the hillside of Poggio Nebbia, where the soil is naturally rich in clay, an element particularly favorable for fruit trees. The Mignone River flows through the valley below and contributes to the creation of a micro-climate which is optimal for all types of fruit. The mild climate, gentle sea breezes and long exposure to the Etruscan sun confers upon the fruit a fragrance and taste that is absolutely superb. Naturally, this is experienced every time you open a jar of our jams.
The secret to our jams is not only the quality of our fruit, but also in the simplicity of the ingredients – fresh fruit and sugar, along with the method of preparation. We blend the two ingredients in a large cooking pot and bring them just to the right temperature, constantly stirring with care. The same technique was used by our grandmothers, passed down to us, and is the time treasured tradition of the Maremman farmers.
Honey
The honey that is sold in our Bottega and in our on-line shop is produced by a nearby organic farm called, “La Prateria delle Api” (The Prarie of the Bee) and is run by the Ercolani Family. Their farm is situated within the Farnesianan territory which is known as one of the most uncontaminated regions in Lazio hosting a wealth of biodiversity in terms of plants, flowers, shrubs and micro-organisms. Therefore, the bees are offered a vast variety of flowers and pollen which begin as early as March and continue to bloom until the end of October. The result? The richest and highest quality of honey to be found!
